Ballerina is an mid season variety, these are a yellow fleshed, shallow eyed tuber with very smooth yellow skin. Ballerina has firm cooking qualities that are perfect for potato salad and are known to be a very tasty variety. Ballerina is not easily bruised and washes up very well, it also has a great storage life due to its long dormancy period.
